Ingredients
Cake
6 eggs, room temperature
2/3 cup white sugar
1 teaspoon vanilla extract
¾ cup all-purpose flour
¼ cup cocoa powder
¼ teaspoon salt
1 teaspoon baking powder
¼ cup butter, melted and cooled
Ganache
2/3 cup heavy cream
1 cup dark chocolate, chopped
Directions
- To make the cake, mix the eggs, sugar and vanilla in the bowl of your stand mixer for 5-7 minutes until triple in volume.
- Fold in the flour, cocoa powder, salt and baking powder using a wooden spoon or spatula, being careful not to deflate the eggs.
- Gradually fold in the melted butter.
- Pour the batter in a 10-inch cake pan lined with baking paper and bake in the preheated oven at 350F for 35-40 minutes.
- Allow cooling in the pan then transfer on a platter.
- For the ganache, bring the cream to the boiling point then remove from heat and stir in the chocolate. Mix until melted and smooth then allow to cool completely.
- Spoon the ganache over the cake and serve right away.
