Cake:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon powder
1 teaspoon ground ginger
½ cup coconut oil, melted
1 cup pumpkin puree
4 eggs
1 cup dark brown sugar
¼ cup white sugar
¼ cup whole milk
1 pinch salt
Caramel frosting:
1 cup butter, softened
2 cups powdered sugar
1 pinch salt
½ cup caramel sauce

- For the cake, mix the flour, baking powder, baking soda, spices and salt in a bowl.
- In a different bowl, combine the coconut oil, pumpkin puree, eggs, sugars and milk.
- Pour this mixture over the dry ingredients and mix well.
- Pour the batter in 2 round cake pans lined with baking paper.
- Bake the cakes in the preheated oven at 350F for 35 minutes or until fragrant and well risen.
- Allow the cakes to cool in the pans then level them and place aside.
- For the frosting, mix the butter, sugar and salt in a bowl for 5-7 minutes or until double in volume and stiff.
- Stir in the caramel sauce.
- Use half of the frosting to fill the cake and the remaining half to decorate the cake.
- Serve the cake fresh.
