1 3/4 cups all-purpose flour
1 cup shredded coconut
½ teaspoon salt
1 teaspoon baking soda
½ cup butter, softened
½ cup coconut oil, melted
1 cup white sugar
4 eggs
¼ cup coconut milk
1 cup fresh raspberries
Directions (Coconut Raspberry Cake Baking Recipes)
- Mix the flour, shredded coconut, salt and baking soda in a bowl.
- In a different bowl, combine the butter, coconut oil and sugar in a bowl. Mix well until fluffy then add the eggs, one by one, and mix well.
- Stir in the coconut oil then fold in the dry ingredients.
- Spoon the batter in a 9-inch cake pan lined with baking paper.
- Top with fresh raspberries and bake in the preheated oven at 350F for 35-40 minutes or until golden brown and well risen.
- Serve the cake chilled.
