Cake:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon powder
½ cup canola oil
½ cup coconut milk
1 cup sweet potato puree
½ cup dark brown sugar
½ cup white sugar
3 eggs
Butterscotch sauce:
¼ cup butter
¼ cup light corn syrup
½ cup dark brown sugar
¼ cup heavy cream
¼ teaspoon salt
Directions (Butterscotch Sweet Potato Cake)
- To make the cake, mix the dry ingredients in a bowl and the wet ingredients in a different bowl.
- Combine the dry ingredients with the wet ingredients and give it a good mix.
- Pour the batter in a 10-inch round cake pan lined with baking paper and bake in the preheated oven at 350F for 35-40 minutes.
- Allow the cake to cool in the pan then transfer on a platter.
- For the butterscotch sauce, mix all the ingredients in a saucepan and cook for 5-8 minutes until thickened.
- Allow cooling then pour the sauce over each slice of cake in the moment of serving.
