2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cardamom
1 cup white sugar
4 eggs
¼ cup dark brown sugar
1 cup of vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 cup crushed pineapple
1 cup shredded coconut
1 cup pecans, chopped
Frosting
1 cup cream cheese
½ cup butter softened
1 cup powdered sugar
1 teaspoon vanilla extract

- For the cake, sift the flour, baking soda, baking powder, salt and cardamom in a bowl.
- In a different bowl, mix the eggs and sugars until creamy and fluffy.
- Add the vanilla, carrots, pineapple, coconut and pecans and mix well.
- Fold in the dry ingredients then pour the batter into a 10-inch round cake pan lined with baking paper.
- Bake the cake in the preheated oven at 350F for 45-50 minutes or until fragrant and well risen.
- For the frosting, mix all the ingredients in a bowl for at least 5 minutes.
- Frost the chilled cake with the cream cheese buttercream and serve fresh or store in the fridge.
