1 cup all-purpose flour
½ cup of corn meal
½ cup ground pistachios
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup extra virgin olive oil
½ cup white sugar
3 eggs
2 tablespoons orange zest
½ cup whole milk
Directions (Olive Oil Pistachio Cake)
- Mix the dry ingredients in a bowl.
- In a different bowl, combine the oil, sugar, eggs and orange zest and mix well for a few minutes until double in volume.
- Stir in the milk, followed by the dry ingredients.
- Pour the batter in a 10-inch round cake pan lined with baking paper.
- Bake the cake in the preheated oven at 350F for 35-40 minutes.
- Serve the cake chilled.
